What a whisk tine is made of
Cut across a bamboo culm and you would see it is packed with those straws. Tough fibre wrapped around hollow tubes that carried water up the stalk while the plant was alive. Botanists call them vascular bundles. Between them sits a soft filler tissue, which is the weakest part of the culm and the part the whisk maker throws away.
Two things about how those straws are arranged change everything:
They are not spread evenly. They pack about four times more tightly at the outer skin than deep inside the stalk. Only the outer skin becomes your tine. The craftsman splits off that hard outer layer and removes the soft inner flesh entirely.

Which means the real question behind "is this a good whisk" is narrower than it sounds. It is: how dense and closed grained was the outer culm this tine came from? That is where purple and white bamboo part ways.
Purple versus white: it comes down to how much water the tine drinks
Every bowl you make puts the tines through the same cycle. No single cycle hurts. What kills a whisk is that cycle repeating every morning for months. Wet, flex, dry, over and over.

Porosity decides how hard each round hits. A more porous tine pulls more water into those hollow straws. It swells more, softens more, and takes longer to dry, which happens to be exactly the condition mould is waiting for. A denser tine drinks less, moves less, dries faster, and springs back closer to where it started.
Purple bamboo (botanically Phyllostachys nigra) has a tighter culm wall than the white bamboo in most commercial whisks. Less pore volume, less water uptake, less swelling per cycle. That is the whole mechanism, and it is why the durability gap is measurable rather than marketing.

Why "harder" is the wrong word
You will see purple bamboo described as harder. Hardness is a surface property, and it is not what fails when a whisk dies.
Whisks fail by fatigue and water damage. The tines lose their spring, take a permanent set, spread out, and stop holding foam. Nobody has ever worn a hole in a whisk. The property that matters is density and porosity of the culm wall, because that governs how much water the tine takes on and how completely it recovers, cycle after cycle.

Test it yourself in two minutes
Weigh a dry whisk on a kitchen scale, in grams, to one decimal place. Soak the tines in water at around 80°C for sixty seconds. Lift it out, shake once, weigh it again.

The percentage gain is roughly how much water the tines drank.
Run it on a cheap white bamboo whisk and then on a purple one. The more porous whisk posts a noticeably higher number, and that number is the same thing that turns up months later as warp and mould.

Is purple bamboo actually a different plant, or is it dyed?
Different species. Purple or black bamboo (Phyllostachys nigra) grows green and darkens naturally to a purple black over about two years. The colour is the mature culm, not a finish applied to it. White bamboo whisks come from a different species, often boiled and winter dried to lighten the surface.
Does purple bamboo foam better than white?
Foam comes mostly from tine shape and taper, not from the colour of the bamboo. Purple bamboo's advantage is durability. It holds the geometry that makes good foam for much longer. A white bamboo whisk can foam beautifully when it is new. The question is how long it stays that way.
Why does my white bamboo whisk smell after a few weeks?
Because it has absorbed water it cannot shed quickly enough. Porous bamboo holds moisture deep inside the tine, and trapped moisture plus matcha residue is what mould feeds on. Denser bamboo, faster drying and a holder all help.
Is it worth paying more for?
If you drink matcha regularly, yes. Suppliers who stock both report purple lasting up to three times longer, so the cost per bowl works out lower even though you pay more upfront. If matcha is an occasional thing for you, a bowl every couple of weeks, a basic whisk is fine.
What bamboo do the Japanese tea schools use?
It varies by lineage. Urasenke uses white bamboo (hachiku), Omotesenke uses smoked bamboo (susudake), and Mushakojisenke uses black or purple bamboo. There is no single correct answer here. Each school's choice is part tradition, part aesthetics.
