The tine count isn't a dial the maker turns. It falls out of how many times one fixed starting number gets split, and once you follow that math, "more prongs is better" stops holding up.

Every chasen begins as 16 segments

The traditional process is fixed for the first stages. The craftsman cuts a bamboo segment, shaves the outer layer, and in the step called katagi splits the tine end into 16 segments. Every chasen on earth starts here, the $7 ones and the master-made ones alike.

The final count comes from the next step, kowari, where each of those 16 is split further, anywhere from two to eight more times, producing whisks with between 36 and 120 tines. The formula is simply 16 starting segments multiplied by how finely you re-split them:

  • Split each segment into four and you get 64 tines.
  • Split into five and you get about 80.
  • Split into six or seven and you get 100 to 120.

So a higher count doesn't add bamboo. It slices the same 16 segments thinner. At 64, each tine is a clean quarter of an original segment, a full and even cross-section. At 120, each tine is a sliver shaved toward 0.1 mm at the tip. Every count above 64 buys its extra tines by thinning all of them.

Foam comes from the taper, not the count

The count charts also skip over what actually makes foam. Fine bubbles come from the taper at the tip, not from how many tines there are. In the finishing step (aji-kezuri), the final 1 to 2 cm of each tine is shaved so thin it turns flexible and translucent. That flexible tip is what breaks the surface into micro-foam.

A well-tapered 64-tine whisk and a 100-tine whisk both foam well, because both have properly shaved tips. The extra 36 tines mostly buy you fragility. The prong count sells the whisk; the tip taper makes the foam. That's why an experienced hand can pull dense micro-foam from a 64 while a beginner can splay a 120 in three weeks.

So why does everyone sell 100 and 120?

Two reasons, and neither one is about better matcha.

The first is marketing. "120 prongs" sounds like more whisk for your money, and it's a spec you can print on a box.

The second is production. Standard white bamboo splits dead-straight along the grain, which makes very high tine counts easy to mass-produce without tines crossing. So the market filled up with high-count white-bamboo whisks: cheap to make, impressive on paper, and quick to fray in daily use.

None of that means 120 is wrong. If you prepare one careful bowl of high-grade usucha and treat the whisk gently, a 120 gives you the finest possible foam. It's the wrong tool for a whisk that gets used every morning and rinsed in a hurry.

64 is the traditional daily-driver count for a reason

64 is roughly the count of the shin chasen, the formal shape used by Japan's two largest tea schools. It sits between the specialised extremes, which happens to be right where most people drink matcha today:

  • The modern daily latte is how most people actually drink matcha: whisked fast every morning with milk waiting. It needs tines sturdy enough for rushed daily use but fine enough to foam.
  • Thin tea (usucha) is the light, frothy bowl whisked with just water. Dedicated usucha whisks run many thin tines, up to about 120, built for maximum froth.
  • Thick tea (koicha) is a dense, kneaded, almost paint-thick matcha used in formal ceremony. Koicha whisks run few, thick tines (roughly 36 to 80) that won't snap under the paste.
  • The ~64-tine shin covers all three: thick enough for daily whisking and thick tea, fine enough to foam a latte or a light bowl.

That middle position is what a daily driver needs: the count that does everything well instead of one thing perfectly.

Test it yourself

Hold your whisk up to a window. If it's a typical 100- or 120-count, the last centimeter of each tine goes translucent: beautiful, and visibly the first thing that will snap. Now look at where yours has already splayed. That's not bad luck; that's a sliver doing a tine's job.
